Roasted Sweet Potato Salad

Ingredients

2 to 3 large sweet potatoes

2 sliced green onions

1 tablespoon sunflower seeds

1 tablespoon raisins or dried cranberries or blueberries

salt and pepper to taste

1 teaspoon olive oil

Dressing:

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 teaspoon sugar

1 clove minced garlic

Directions

Peel and cut potatoes into 1-inch pieces, and toss with the 1 tsp of olive oil. Season with salt and pepper to taste.

Roast on a cookie sheet at 400° F for 30 minutes.

Prepare dressing and add the sunflower seeds and berries or raisins to the dressing.

Once the potatoes are done, let cool a bit and then add the dressing mixture and toss and serve.
